how can I clone a project without installing pulg in, and not having the constraint to modify fields that happens for all projects?

Out of the box you can use Create project with a shared configuration:
Custom fields, statuses, issue types and so on are global entities in Jira. I do not know a plugin, which would clone custom fields for you. And even if such plugins could clone a custom field, would these plugins give this field a new name or leave the same name?
Mostly it is not the case that users want to create new global entities, while cloning a project.

Just click on Create Project and you should get below popup:
At the bottom of the pop-up you can see "Create with shared configuration". That would create a new project sharing the same configurations as the existing project.

if I choose "create shared configuration", if I change the name of a field on a project automatically it will change it on the other.
