Hi,
What does the history tab show on these issues. Is there an entry where the sprint field was updated to include new sprint?
That seems to be the case - the update on the 6th May, when the new sprint was started, it shows that there was an update.
Would that still be updated even with the issue being in a done status as well as all sub-tasks? So all done issues and sub-tasks all done can get moved to a new sprint when it is started?

What does the entry show? Did a user add the sprint? Where does the old done issue show on the new sprint? Right-most column?

The old done issue shows on the right-most column on the new sprint.
The history is as attached

Would it just be that the user possibly added the done issues then to the sprint? Without realizing it or it gets added when a new sprint is started?

If the issue was indeed completed in the sprint, then it should never show up on the backlog such that it could show up in another sprint. Moreover, even if you manually changed it to add the active sprint, it should not show. The one possible exception would be if indeed, there has been some configuration change associated with statuses, and which status is considered complete. it would be good to see a screenshot of your board with the old issue shown in the sprint. It would also be good to see your workflow and the board column mapping.

I have attached what I can but I noticed something on the Sprint Report, that particular issue that is shown to be Done on the status, it is showing as Issues Not Completed on the Sprint Report. Could that possibly be something that is contributing as the status is set to In UAT?

I'm not sure if Cloud works differently than Data Center in this particular case but, in my Data Center instance, if I have a story that was completed in an old sprint and then I add it into an active sprint, it will show up on the sprint board under that active sprint.
It's my understanding that this is just how Jira works, since you typically don't want your resolved issues to disappear from the board while the sprint they are in is still active.

@Drishti Maharaj , yes if it shows not completed is sprint and then added in new sprint it would show. If this is related to a single issue I would simply leave in the Done column when sprint is completed and be done with it.

Hi Jack, so it seems that it was completed though in a previous sprint. And when the new sprint added, it got added as well. Seems to be a few issues all completed in a previous sprint.
