I am not sure what you are asking here, but from the screenshot, is the problem that your screen is too narrow for the data and so some parts of the screen are being obscured by data in front of them?

I am sorry, I do not understand what the problem is.  The diagram makes sense to me, it matches the data you have shown us.

The dates on the projects are shifting on their own, what can be done about it? You have to manually rearrange

The plan will "shift" based on the data you put into the issues, that's what it is for.

They're not "shifting on their own", they're re-calculating based on data your people are updating on the issues.
