We started a new sprint and didn't add all items from the backlog that were supposed to be included. Adding them just after produced a nasty red spike line in the burndown chart.
Would like to remove all issues from the sprint, delete, and start over with same sprint number.
Is this possible?

If by Sprint Number, you mean the Sprint Name, then yes! If you are referring to the Sprint ID, then no.
Yes, the sprint name is what we were concerned with, assuming that the sprint ID is only visible to server admins and relevant to Jira server?

Technically the Sprint ID is available to anyone. For example, if you have a user that is doing an advanced JQL search like this: "Sprint = "Sprint 2022.1"", Jira will automatically change the query to: "Sprint = 32930", where 32930 is the Sprint ID. When I am collecting Sprint data via a JQL query, I always use the Sprint ID because those values are always unique. Different Jira Boards can use the same Sprint Name.

Even so, the name is what's important for us, not the ID. Thank you for the additional comments.
