Each ticket on our Board contains multiple subtasks, each assigned to different team members. However, when filtering the Board by an assignee, only the parent tickets are visible, not the individual subtasks. How can I adjust the filter to display subtasks assigned to a specific person?

This is currently not supported in business projects. However, you can vote on the following suggestions related to the functionality you've asked for:
There's a 'workaround' with using classic issue view to show all issues (sub-tasks included) that are assigned to specific user > see description of JWMCLOUD-322.

Are you saying that if we don't have the Cloud version of JIRA and do not have any added extensions, it is not possible to get a list of sub-tasks and its status for a given story?

It depends on what kind of view/visualization you're looking for.
You can definitelly get a list of items by using Jira Query Language (JQL) (or basic search) when using global item/issue search.
Related to server/DC, I'm not sure how sub-tasks are displayed on boards.
We'd probably need some more information or requirements from your side to see if that's possible or not.
I'd also suggest opening a new thread here or a new question.
