In a Kanban board, I need to divide a column in another status -doing and done- , the idea is to view when a task start and finish in a specific process (1 column) before to pass it to the next process
You can map multiple status values to the same column for the board. The trick is how to easily show the differences between "status-doing" and "status-done" on the board.
Two possible ways are to use swim lanes or card colors and filters for the status differences. That would enforce one WIP limit for the single "status" spanning 'doing' and 'done'. To transition, you cannot drag an issue between status values mapped to one column...instead hit the shortcut "." and you can select the new status to change to next.
It may end up being easier in practice (for the team) to create different columns, where one reflects "status-doing" and the other is the queuing column of "status-done". However, that method would not enforce the shared WIP limit.

When on a board and you have an issue selected, the period key "." will pop-up short-cuts to Jira actions. You can start typing the name of an action or status to take that action.
For example,
My favorite short-cuts are 1, 2, 3 keys: 1 - go to backlog, 2 - go to board, and 3 - go to last run board report.

You can do as Bill suggests above, but you can also display 3 fields for each card using the card layout under Board Settings. So you can show Status as one of the fields to be able to quickly see which Status the issue is currently in.
