I am looking to add and remove a few options from the root cause categories. How can I do this?
"Root causes" is not a system field, so it must be a custom field.
Log in as an admin, go to Admin -> Issues -> Custom fields, look for "root causes" and configure it. You'll find it has a list of options you can add/delete/edit

It seems like you are referring to a select list custom field. The options in that can be managed by your Jira Administrator. In case you have admin rights then go to Admin | Issues | Custom fields (under FIELDS), find the field and modify it.

So when a user closes a ticket in JIRA they have an option to pick the root cause.. I need to remove and certain fieldfrom the root cause" categories
