Looks like a business project with some custom fields which you need to build and put on the screens.

At a guess, do you mean you want to use Jira to manage demonstration sessions and/or systems? If so, then yes, you could create a new project (or several projects) that are dedicated to managing demos, totally separate to the other projects in your Jira.

I'd probably start with the third business project - that's got a slightly more complex workflow than most (6 status rather than 3 or 4), so when you're editing the workflow, you've got more to update, rather than adding lots.
For the fields, it doesn't matter what template you use, you're going to need to add all of them.

When you say "third business project", what are you referring to? The Options of templates that i have when creating a new project in Silver Bullet are, refer to image below

You did not say you were on Cloud, so I assumed server, which has three project types defined for business.
The idea still stands though - pick a business project with the most complex workflow.

Not really, the question is a bit too vague. At this point, it is better that you experiment and learn what the various templates do. You should pick a template that sounds like it is closest to what you're going to be using the new project for.

Like @Nic Brough -Adaptavist- mentioned, you can create multiple project and designate them as demo project and build an integration with you SuccessFactor interface.
