We have been through the steps to allow all users in a certain group to change the due date (administration > schedule issues > select group > grant) However this is still not working and we still can't select a due date. Even the person who set up the Jira account who is an administrator with full permissions can't set due dates! - Please Help.

Can you tell us a bit more: do you have an error message when setting a due date? Is the field absent from certain screens/forms?
What do you do when you try to fill in the due date?

We figured it out in the end after pressing many buttons! - It wasnt showing as a field when you were setting up and issue and when you were on the issue you could see 'due date' but could not amend - however by using the 'where is my field' option we managed to rectify this.
However we are now trying to set this to the template so when we set up and new project the 'Due Date' is missing and we have to add it again - is there a way to amend the template so each time we set up a new project the 'due date' is a option

Cool you've figured it out!
You might want to check and assign the Due Date field to the default Screen Schemes for new projects to use it. Jira might create new scheme for each project but you can reuse a Screen definition from a project to another (and pleaaaaase remove unused schemes).
The global idea here would be, for you, to define the Issue Type Screen Scheme you want to use by default and use it as much as possible. You can even create a project "from an existing configuration" which will reuse all of your definitions from another project (automatically share the schemes).
