My epic is showing a date in early January when I started the epic in September. Every time I try updating the start date or due date it reverts back to the original date. I'm not using big gaant plugin or roadmaps. I can't get the date to stay.

did you check your permissions? There are two permissions which may impact you the ability to update Due Date.
Check the permission Scheme for your project. The two permissions are manage sprints and schedule issues. At least those two I have encountered before.

I checked those and they are fine. Also, I didn't change any permissions and I've been using for 6 months. Perhaps it's because we updated workflow and status mapping?
