The 29/Aug/23 due date field is no where to be found on the edit section of the jira ticket the 08/sep/23 is the standard due date field. Where can I edit the first field, I can't find anywhere!

What type of project is this - Software, Service Management, or Work Management?
Is it a Team Managed project or a Company Managed project?
Notice the case difference in the two fields - Due Date vs. Due date. That is an indication that Due Date is a second custom field. If this is a Company Managed project, then if that field is available in the Field Configuration for the project the data could have been put into it through an Automation Rule or a Bulk Change, even if the field is not currently included in a screen. You could edit the field in the same way.
If there should not be a second Due Date field and this is a Company Managed project, you could ask your Jira Administrators to remove the field entirely from the system, and that would erase the data from all issues where the field was used.
It's a Software project in a Company Managed project
Would this mean a admin would need to make to change to the Due Date field?

That depends on the change you want made
If you just want to empty the field you can probably do that through a bulk issue change, if you have permission to do that.
If the field should not be accessible in this way in the future, that would require an administrator to make a change.

You need to check with user having admin access in your Jira to see if "Due Date" field is hidden or ask him to check if for this issue type two different fields are added i.e "Due Date" & "Due date", ask him to remove one which is not required from specific issue type.
