How to add an Epic Link field to a new type item?

The Epic link field is an inbuilt field created to set the connection between Epics and Tasks of Classic projects.
I see the screenshot you sent is related to a Next-gen project where the Epic connections are created in a different way, not using the Epic link field. This difference between Next-gen and Classic projects is described in the documentation below:
Basically, you just need to click on the "Add Epic" button to connect Epics to Tasks/Stories in Next-gen projects:
To search for issues under a specific Epic in Next-gen, map the epic key in the "Parent" field using a JQL query:
That being said, can you please describe what exactly you're trying to achieve by adding the Epic link field to a Next-gen project? Maybe we can suggest some different options to achieve your final goal.

I need to extract a list with information from several projects. I thought about using the epic link as a project identifier.
When inserting the epic in the suggested way it does not appear in the extracted list.
is there any other parameter that i can use as a project identifier?

The behavior above is expected, as the Epix link field is not filled for Next-gen projects.
To display the Epic related to the issues in the issue navigator for Next-gen project, you must use the column "Parent":
