We currently have a min Release board but also have a Release Board 1 and a Release Board - these are simply the first half of the release board and then the second half and are used for better visibility and organisation.
I am looking to user the 'All sprints' drop down option to select the Release Board 1 and Release Board 2 as a type of quick filter however when i select either it does not update the board to show the correct number of columns, any idea how i can fix this?

No, you can't. The dropdown belongs to the board you are viewing issues from. It is possible to view issues from other sprints if they happen to appear in the board filter of your current board, but the dropdown does not automagically redirect you to a different board.
If you want to see different columns, you'll need to navigate to a different board, that has that different configuration.

Ah ok, do you know if it is possible to have a quick filter using jql which would take you to another board or is this also only for the content of the board you are working on

A board is really a different screen with features attached to it. So if you want to view another board, you really need to navigate to its URL before you can access any of its features.
All the quick filters, the sprint dropdown, swimlanes, even the reports are features linked to a board, not the other way around.

Thanks this does make sense- I am sure i seen an option to hide empty columns from your board and think this may be an alternative approach for us - are you aware of how this is done

Although that is an option I had never heard of before, it appears that you can indeed do something like that with this chrome browser extension.
Be aware that this is not native functionality from Jira, but an independent extension.
