For example, each Jira ticket has around 20 labels and I have to select 1 or 2 labels from each. I have a filter with selected labels but when I use it in Two dimensional filter and add Label as y axis, It returns all the labels present in ticket under Y axis.
1) Is it possible to add selected labels under y axis?
2) Is it possible to change the label name and display it with person name.

I understand what you are trying to do, filters will give you the list of issues based on the query and when you use that query the gadget won't exclude labels.
You would need to use an app for this. Take a look at eazyBI, you can create variety of reports like this and select only specific labels.

Apps are installed within Jira. It would be good if you check with your Jira Administrator about it.
The other thing you can do is export data in csv and report in Excel.
