Basically, you can follow the steps below to hide fields - Except for the issue security field, since it can be restricted through the permissions (Project settings > Permissions):
- Navigate to project settings > Fields > Click in your field configuration > Fin the field and click to Hide
The functionality above will remove the field from the issue view.

Field configurations can be down to the level of issue type. If you take the field configuration scheme as shown by Petterson, you can copy it and modify it so that it hides that field.
You can then use the project's "field configuration scheme" to tell the project to use the original field configuration for most issue types, and then the new one for your one issue type.
