When viewing an item, the history shows the update the user has made. But this update saves all data entered into a field. Is there a way to see what the person amending the item contributed? Similar to githubs red/green colour coded areas on a commit.

Unfortunately, Jira Cloud can't be configured in a way to highlight what was changed by color in the issue history. There is a free app that provides you with this functionality (Improved Diff for Jira), however, it's only available for Jira Server application.
We agree with you that this is a useful feature when analyzing the log of a field with many characters, so we created the following feature request to implement this functionality in Jira Cloud:
See side-by-side highlighted diffs of issue text-fields in history as if they were source-code

Have you tried Issue History app? It lets view all changes were made with each issue and who did them.
