I have a team that I am struggling to find the best project to represent its work and its day to day tasking. I believe the best one to use would be a Team-Managed Business Project, but I am having troubles with the workflows.
It appears that in a business project compared to a software project, you are only able to create one workflow that is shared across all issue types. I have a workflow scheme that I created as I would like two separate workflows for Epics and Tasks, but I cannot find any way to add this workflow scheme to the project similar to how i would on a software project.
Does anyone know the steps to customize workflows for different issue types in the Business Project?

Unfortunately @Kai Becker 's answer is not entirely on point for your scenario.
It is true that you cannot apply a Workflow Scheme to a Team Managed project.
However, you can have different workflows per issue type in a Team Managed project.
Go to Project Settings > Issues Types. Click on the issue type for which you want a different workflow. Click on the Edit Workflow button in the upper right corner. This will open the workflow editor.
I the upper left corner you will initially see that the workflow applies to multiple issue types, based on the display of the issue type icons.
Modify the workflow. Click the Update Workflow button. You will be presented with a screen to specify the Issue Types that you do want the new workflow to be applied to.
If you want it to apply to only a subset of issue types then remove all the OTHER issue types from the selection. Then click the Save button. That will apply the modified workflow to only the issue types you specified. For the issue types you removed, the original workflow will still apply.

thank you for your question. The short answer is: you can't.
Team managed projects are meant to be an easy to use type of project configuration where teams have full ownership and possibilities to modify content.
They are like containers that have separate configuration that is in no way connected to other config entities. Because of this you can not assign schemes to a team managed project
