Currently I have a project set up and a scrum board underneath it. I created another board and went through the following steps:
1. Clicked the drop down for boards underneath the project on the left side navigation
2. Clicked " + Create board"
4. Chose "Create scrum board"
5. Chose "Board from an existing project"
Outcome
A board that replicated ALL the issues from my original board rather than creating a blank board, which is what I wanted.
What do I want to achieve
To have two boards under one project that serve for different purposes.
1) Board for dev team
2) Board for UX-UI team
They should run independently and will have different issues and sprints.

Current issue is now I have a UX-UI board with all the issues from the dev team board, which I do not want! Boxed in red is the board I want to delete without it affecting Prod-Dev board.
If I decide to delete the new board that I've created, the following message appears.
I am afraid of deleting the new board and it deleting the issues from the first board.

Questions
1) By clicking "delete" in the screen shot above, will I risk loosing all the issues from my first board?
2) Can you create boards that are independent of each other under one project or do you have to create a separate project for that?

Answers to your questions:
1. Deleting boards will not delete the issues in the boards. The issues are stored in the project.
2. There are two approaches to visualize the data here:
- you can create two separate projects, each with its own issues and board(s) (this seems like the better approach to your scenario)
- you can create two boards within a project, but each board has a filter that pulls in issues with a particular characteristic (for example, Board A's filter pulls in all issues in your board that have component A, and Board B's filter pulls in all issues in your board that have component B)

Just to confirm that I understood well, I'll rephrase the below.
1. It will be safe to delete the new board "UX-UI" without it deleting or effecting any issues in the backlog or active sprint of the first board that I originally created "Prod-Dev" correct? Regardless if we are in the middle of the sprint?
2. Yes, it seems that option 1 to create separate projects with its own issues and boards, will be a better approach for what I'm looking for.

Yup, you got it!
The qualities of the issues (what sprint they're in, their rank, their status, etc) will not be affected by deleting a board. All that data is stored in the issue itself - the board is just a visualization for the data.
