First off, I swear every time I create a new Jira project the experience and options are different...
I just created a new company wide "task management" project. It has a "List", which is new, and is really cool. But it also has Forms, which I do not want or need. In the old "new" style projects, it was really simple to enable and disable features. How on earth do I do that now?

I agree with you that things continue to change. On one hand I think the templates is a really good idea, however they are sort of canned and the behaviors are quite different so the more flavors you have the more confusing it can be at times. 😕The alternative is to just simply create a basic project like a Jira software project and then modify to meet your needs. I have seen, on some of these templates that you will have a Features configuration similar to team managed projects. My assumption is that this will be the area where you can disable and enable certain features on a given project template.
So there's no way you know of to remove the "Forms" section from a JWM project?

I think I just realized this is part of a completely different product called Jira Work Management. We only have Jira Software and Jira Service Desk. Does that mean if I continue using this project template we'll be charged a boatload of money? Seems shady to just slip in "templates" from another product we don't own when I'm trying to create a project in a product we do own.

No. You get JWM included in JSW. It is Jira Core rebranded and includes a renewed effort to make it able to stand on its own as a product for business focused users.

I realize this is a bit late, but you shouldn't use Jira Work Management. Jira Software does all the same stuff, and you can configure it better.
I am running one project through Work, and I regret it every single day. All my other projects are in Software. But even there, you can't get rid of the useless boards.
And now I notice I have a new thing: Goals, apparently part of Atlas? I don't want this, I don't want any of my team to click on this and wonder what it is, I don't want to see or hear about it in any way because it is not part of running my project. It's like an ad for Atalassian, but usually I don't have to pay for ads.
I want so very little from this software. Let me turn features on and off. Make the colors match. Put a Load button wherever you have a Save button. Why is this asking too much?
