I tried to export my X-ray tests using better Excel, yet I am unable to find the attribute matching "Test Steps" in List View.
Is there an action to perform to have such an attribute available ?

Does the base URL you are seeing in the browser's address bar end with ".atlassian.net"?

That means you are on Jira Cloud!
While Better Excel Exporter has an Xray integration on Data Center and it can export Test Steps:
... it is not available for the Cloud yet, unfortunately.
The good news is that the team is working on 3 new integration and Xray is one of them. I will post an update to this question when the integration became available on Cloud, too.

Then how can I export test steps (including steps from "Call tests") ? Or test steps from a test execution ?

As I said, Xray export to Excel is not publicly available in the Cloud version of our app yet. (But we have a prototype that we use internally.)
If you want to start using it before the full release, open a ticket for our support team and we will see if we can give you access to the feature before the public release. Please link this topic in your ticket.
