I have about 10 dropdown fields, each with the options 'Low', 'Medium', and 'High'. I'd like to add an additional field that takes the results of each dropdown field and creates an average result, i.e. 'Low'. Is this possible?

If in excel sheet, you can customize the formula and can come up with the expected result.
But to do the same feat in Jira software, you may need to elaborate the requirement OR share screenshots.

I am creating a new request type for a Vendor Risk Assessment. We need to evaluate the security concerns of new vendors, so we have a list of 10 types of risk, each one using a dropdown menu with options for Low, Medium, and High. I am thinking we could convert these selections into numbers using some script, like 1-Low, 2-Medium, 3-High in order to calculate the average.
At the top of the page, we want to display an overall security risk, which takes into account each of the selections in the 10 fields. So, if the average is >2.5, we would show the overall risk as HIGH.
I am aware that it is possible to do this in Excel but it would be ideal to have everything on the same page in Jira for when the relevant teams look at the issue.
