How can I set edit permission to a field in JIRA issue?

I'd like to grant users permission to some fields in an issue but other fields must be restricted from editing.

Hello,

The only thing you can do out of the box, you can remove the restricted fields from the edit screen and make a separate transition to set the fields. You can set a condition for this transition to make this transition available for certain users.
