The post function is added and I can see the different resolutions when closing a story
e.g. Rejected, Duplicate..
Yet, once the story is closed, I can only see 'Done' but cannot tell what the resolution was.
I still need to see the resolution on the closed story.
Resolutions do not have sub-types, so I am a little confused on what you mean by that.
To see the resolution on a closed story (in fact, a story in any state), you just need to look at the issue. The resolution is always shown on the issue (with unresolved if the field is empty)
I've 4 resolution options to select when closing a story as Done (Duplicate, Rejected, Done, Cannot Reproduce) , when closing a story and selecting Rejected as an example as a resolution option, the story will show Done as a status which is correct and "Done" as a resolution which is not correct, I wanted "Rejected" to displayed instead.

So not sub-types of resolution, you just mean someone (or a preset function) has put a resolution you don't want on an issue when it was closed (meaning the status changed to closed)
You'll need to re-open the issue and re-close it, going through the screen that asks for you to set a resolution, and select "rejected" instead of "done".
Note that your workflow might not have that screen. It may be setting resolution to done automatically when the human closes the issue. In that case, you will need to amend the workflow, changing the function that sets it, or remove the function and add a transition screen to ask the humans as above.
