I am trying to add a start date and end date to the tickets to track the progress of team on day wise basis but I am not able to add any customized field as of now.

If you are just looking to feed in information on dates, any date field should work if we put them on the screens as suggested by Alexey above.
But if you are looking to track the progress of your issues through time estimates, you will have to do via time tracking as explained here.
If you want to add new custom fields to your instance, you need to have Jira administration global permission and create custom fields as described here.
Not sure on your precise requirement, but if you want to track your work progress, time tracking and tracking via story points are the 2 ways to go about.
