We had integration working at one time, and then it stopped. I noticed the MS Teams Jira Cloud app was older and needed an update, so we applied the new app. Now, when selecting the app, we can "Sign In" and show it is authenticated successfully, but no options appear when selected. This includes attempting to open notification settings, or adding the app to a channel. The window appears that would normally display the options to connect to a project, but it is blank. It seems anything related to pulling info from our projects will not display at all in Teams.
I can log into Jira Cloud directly, and via MS Teams, and I have removed & rebuilt the connection multiple times. Any ideas?

Sorry to hear about your troubles. Maybe this thread can help. Especially:
...try logging into Office365 on the web and configuring the plugin there. Then try again in your Microsoft Teams client.
The other day I had the problem of not being able to configure the Jira instance in Teams. The above helped me.

That was it! I'm not sure if this is an issue on the MS side of things, or Jira though. But for now, logging in via O365 instead of the local thick client did address this. Many thanks!
