When I login into Jira Software, it warns me that my license has expired. Under 'Versions & Licenses', I can see my old license (with old SEN number), but not the new license (new SEN) that I recently purchased. How can I delete the old license (with old SEN) and add the new one?
You need to get the licence key from your my.atlassian.com account and paste it into the licence-key box in the admin section of your Jira install.
For this, you need to have the Jira System Admin rights.
