A teammate accidentally changed an Epic to a Story. We changed that ticket back to an Epic. All the tickets under the Epic were removed from the epic, so we we had to manually add them back.
Is there a way to make it more difficult or even prevent users from changing Epics to Stories?

There are 2 ways he could have applied this change.
The Issue Type field is in the edit screen, this allows you to click on the logo and change it.
In the project permission scheme the Move Issues action.

It can be done using ScriptRunner if you have it installed but not sure if it is possible for Cloud version.
There is an option for Server/ Data Center versions though.
