How do I specify a issue status as completed?

I have a workflow that I have created  that has 3 statuses that I want to be considered as done by the workflow.  They are Closed, In Production and Done.  Prior to now I had a transition that would clear the sprint field  but I needed to remove that transition.  I want to be able to close a sprint and have items in these 3 statuses be removed from all sprints. Currently they are moved along to my specified next sprint with all the incomplete items.

How do I configure the workflow to consider these statuses as completed?

You don't tell the workflow, you do this in the board.

Jira Software considers the last column on the board, on the right, to be "done".  It does not look at the various status directly, you have to map them on the board.

This makes sense to me and something I didn't consider when building the new workflow and setting up the new projects.  I have changed it and will see what happens as I close the current sprint at the end.
