You can export a work item and its change history to PDF with the Better PDF Exporter app.

You can find example exports here. The change history section in the document looks roughly like this:

Currently, in Jira Cloud, the audit log can be exported as a CSV file. You receive the CSV file via email after exporting it.

Note -

• 
  The CSV file will include up to 10,000 activities from the past 180 days.
• If you're using search or filter options when exporting, the CSV file will only include the filtered activities.
• The download link in the email expires after one day.
• The audit log isn't available if all your Jira Cloud products are on the Free plan.

Export audit log

While directly exporting the audit log to PDF or Word isn't currently a built-in feature. You can utilize the third-party apps from the Atlassian Marketplace.

When we create a ticket there will be having a activity it will capture whole ticket data. Is there any possibility to take this activity of Jira ticket to export PDF or excel. Please find the attachment below of the Jira ticket activity.

Out of the box, Jira Cloud does not allow the direct export of an issue's activity (history, comments, and status changes) to Word, Excel, or PDF. Issue Navigator only offers CSV exports, which are devoid of activity details.
