How to change workflow step default assignee

I'm someone new trying to learn about how to use Jira since our Jira admin left, and i am looking to modify the default person a workflow step is assigned to. I can't seem to figure out how. I have found Properties for the workflow and how to add and remove steps from it, but can't seem to figure out how to change the default assignee once the step is chosen. Any help on this would be appreciated, thanks!

Workflow steps are not assigned to people, and the workflow does not (by default) do anything with the assignee.

So I am a little lost on what you mean by "default person a workflow step is assigned to"

I think you may have inherited a workflow that has been modified - it has had post-functions, listeners or automations that are triggered when someone moves an issue from one step to another.  Ones which then change the assignee as the transition completes.

Or are you talking about the automatic assignment at issue creation time?

I'm sure i'm using the wrong terminology, so i apologize for that. The source of this question is a workflow a previous person had setup, for our onboarding process, where we have different steps that get clicked through in Jira. Each step that is continued to, is automatically assigned a specific person and is placed in their Jira queue. I'm looking to change that default assignee for one of the steps.

I hope that kind of makes sense
