Our team are going through the same tasks grouped by same phases and we would like to create templates in order to take them through it, ideally where we could preset duration (to see if people aren't going to deliver on-time).
Any idea how we could do this without adding any extra-cost (e.g. no add-ons)?

While adding custom templates, especially including preconfigured issues is not possible in Jira, there are some workaround that get you somewhat close, even without paid addons.
1. Project creation with shared settings, if you are using company-managed projects in JWM than this checkbox during project creation allows to create a new project with shared schemes with a source project. While it does not clone issues, it still reduces the work to get your project started.
2. CSV import (External System Import as Jira admin). It is possible to define a CSV table with issues and field values for the fields mentioned above. If you are using External System Import to import the issues, you can even specify to create a project alongside it. But to my knowledge, you can't customize the project settings.
3. Jira automation provides a great UI to preconfigure issues that should be created together. The question is, what should be the trigger. While Jira automation comes with a 'Project created' trigger, you can not specify a project category so it is hard to limit the automation to certain native project templates. Alternatively you can set the trigger to 'Manual trigger' but than you would need to first create an issue in the new project and trigger the automation from there.
4. Addons, yes there are also free ones. There are a variety of apps that are designed to handle your requirements of setting up projects and cloning issues or creating issues from a preconfigured template. Search for terms like template, clone, issue, project and if you want filter for free apps.

Sorry for the late reply. Indeed, you understood correctly;
Regarding your points:
1. Project creation with shared settings -> We are indeed using company managed projects, I'll request our admin to try this out.
2. CSV import (External System Import as Jira admin): Thanks, but this option seems too much work, the idea is to help some leads to start projects quickly and make sure issues are tracked in Jira.
3. Jira automation: This could be useful for Epics/tasks duration ;ideally I'd like to have both i.e. due date and original estimate. For example if a certain task is collect feedback, then I'd love to be able to ask someone to enter a start date e.g. 08th Aug. 23 and have an estimate of 1 week so it will automatically set the due date for 15th Aug. 23. I believe that automation rules would allow me to do that, is that correct?
Ideally we could use Jira automation for project creation if it works with a manual trigger, any links on how to do this would be greatly appreciated.

Regarding 3.
Sure, automation rules could take the field change of one date field as an trigger to calculate and set the due date accordingly.
Check out this docu on smart values and date fields. While dates are always annoying to deal with, you'll get the hang of it.

I am not sure I am completely understanding your need. But you can't really create a new template. You can create a project based on a template and then modify the schemes associated with the project.
Afterwards, when you create new projects you can create them based on this existing project and using the schemes you have setup.
If you need issues automatically create, then you can create an automation rule to do that.

Sorry for the late reply on this one. It seems I didn't make myself clear; that's what I'd like to do i.e. create new project based on an existing project and using the schemes I have setup for that.
I will look into automation rules for that, but I'd like to find out more about what can be done since I'm not the admin for those company-managed projects.
