I have create some mail handlers that create an issue type story , but it only creates description and reporter .
Is there a way or format (with or without add ons) to put any custom fields on the mail to be created on Jira?

There really isn't a way to do this without addons. There are a couple of ways to do it with some of them. The shortest distance from where you are to where you want to go is Enterprise Mail Handler for Jira (JEMH) which definitively does the things you want to do.
If you wanted do get a "twofer" with a single extension that does other things, you could go for ScriptRunner for Jira, then make Groovy Listeners to look at newly created issues and parse things out of the description to fill fields for you. That is a little harder but then you have ScriptRunner for all the other fun things it can do.

We don't I misread the post and missed that this was asking about Cloud, sorry. We are working on Cloud and hope to have something available for customers in a few months.
