Seems that I am not able to create more than one subtask. Why is that? Is there a workaround or have I setup something wrong?
As seen in the picture, initially I can create a subtask but in the second case it doesn't allow me to change the type, just the icon.
@Jorma Polvi It looks like you're using a team-managed project, and you're limited to what issue types you can add on a team-managed project.
If you need different types of sub-tasks you would need to create a new company-managed board, migrate your existing tickets to that board and then get an admin to create the subtask type for you.

Currently Jira only allows one sub-task type in team-managed projects. It's not a setup issue on your end.
In Screenshot 1 shared by you (also refer below) where you have Subtask2 issue type created with subtask icon and No actual subtask added in it, that's why you are able to see the add subtask option.
but in second screenshot, you already have subtask issue type added in it, that's why subtask option is not there but you still can create subtask2 issue type with subtask icon.
Workarounds-
Labels or custom field - You can't create separate sub-task types, but you can use labels or custom fields to categorize your sub-tasks within the single type.
Note
Company Managed Projects - It allow you to create multiple sub-task types.

That is unfortunate. I would have liked to have different workflows for different types of subtasks. I guess I have to figure a workaround.

If you go for company managed project instead of team managed project, you may use multiple subtask level issue type in your project and you will also able to define their own workflow.

I tried that and it s**s. I don't have rights to do anything and have to request someone else to do all the changes. I think I can make somewhat workable solution by making workflow steps conditional.
