Is it possible?

Currenly Jira projects have fields such as:

Project,Key, Project type, Project lead, Project category and URL

Can I add more?

You can't do this off-the-shelf.  There are no "project custom fields" built into it.

There is a nifty little app called Profields that provides this sort of functionality.

Jira allows you to add custom fields.  You can learn more here:  https://confluence.atlassian.com/adminjiraserver/adding-a-custom-field-938847222.html  Custom fields can be added and associated with all projects or a single project.  https://confluence.atlassian.com/adminjiraserver/custom-fields-with-global-contexts-956713282.html
