In order to comply with GDPR, I need to delete sensitive information from my Jira issues, once the issues have been closed. Unfortunately deleted information is still visible in the issue's activity stream and I can't find any way to remove it from here.
Is there any way to edit or delete entries in the activity stream?

Just for us to better understand and help you with this issue, can you please let us know what type of information are you deleting? Is it images, documents and comments?
Also, is it happening only for closed tickets or for opened tickets as well?
Which Jira version are you using?
Once we hear from you, we will be able to test it on our local environment to check why the information is not deleted from the activity stream.

I can delete files, such as images or documents, without the old version of the file appearing in the issue's activity stream, but when I modify the issue description or modify a comment, the old description or comment can still be seen in the activity tab.
Activity is recorded on open and closed tickets and I'm unable to delete or modify activity records once they exist.
I'm using Jira Server version 7.9.2.

The information that is shown on activity stream is a copy of the activity tab of the ticket, so even if we could remove the information on the activity stream, it would still show this information on the ticket where users have access.
Based on this, we have a feature request suggesting the ability to remove specific information from these tabs:
