consequently you can exploit the structure of the pages to reproduce that of the folders. What's the safest way to import attachments from SharePoint into cloud conferencing?

Confluence does not have a concept of "folders" for attachments. Files are simply attached to a page, and listed as a single list, albeit it does version them.
The best thing you can usually do with docs is import them as pages, which, as you say, could be structured in the same way as your file lists (after all, Confluence is a wiki, not a place where documents go to die), but you can only do that for Word-based documents.
If you want to just attach the files, and you have more than a few, then you should probably looking at a script that can iterate over the folders, find each file and use the REST API to create the pages in Confluence and add the files to them.
