My team is trying to set up Company-managed projects, but we have some integrations we've coded in that won't work unless a the Estimation settings is set to Original Time Estimation (this is because we use the Original Estimate field in the automation).
I've tried creating a company-managed project copying the same settings as a project with the Estimation set to Original Time Estimation, but when I created a board for that project, it didn't carry over the board settings.
Is it not possible to ensure copied company-managed project settings includes the board settings? Is there another way to make sure that each project we build defaults to Original Time Estimation instead of Story Points? We're pretty new to company-managed projects and trying to configure them so let me know if I'm just missing something obvious.

Boards and projects are separate things, especially in company managed projects. You can easily add multiple boards to a single project or - if you like - create a board to manage issues coming from multiple projects. Because of that, copying over a board (and its settings) is not supported.
While there is no option to set a default estimation statistic for new boards, you can always switch the estimation statistic of any scrum board at any time. It does not impact your users' ability to estimate their work in time (or story point or any other numerical field you choose to implement for that purpose). As soon as you switch the board setting, the data will be displayed accordingly in the board.
There is an old feature request from the server platform where the ability to set a default was requested, but it has never been implemented an there was never a cloud feature request created (JSWSERVER-7468), so I don't see this being implemented any time soon.
