I am try to filter issues by a new field i have created called security level however this field does not appear in the search filter under all criteria.
Can someone advise how i can add this field to the search filter. It appears everywhere else on the edit screens etc

you can click on columns drop down at right side, there you will get your field shown
When you say "search filter" - where do you mean? For example, my brain rattled off a list of places:

There are a few reasons it might not appear in that drop-down.
On the first two, go to admin -> issues -> custom fields, and find your new field. That display should tell you the "type" of field (select list? Radio buttons? Something odd from an App?), and to the right, if you click "edit", you should be offered the name of the field to change, and underneath, select a searcher. Most fields default to having an appropriate searcher, so just check it is not blank.
The third one is a bit more contextual.
Let's say you've set your field to only be available in project ABC (in the "context" given in the field list as above for type and searcher - screens and field configuration do not matter for this).
If you then select "Project = XYZ" in the simple search, Jira knows none of the issues can have the new field, so it drops the field from the list.

Understood. So a bit more context i need to bulk update around 1612 issues i have managed to bulk update 1000 issues however do not know how to bulk update the rest since i cant even filter by the field security level. I wanted to filter by Security Level = none and then update the rest according to the name specified on the security level.
Would you be able to advise if there is any other way?

I am completely lost then. If the field is not in custom fields, then you did not add it and can't use it. Could you explain what you added?

I created a new security issue scheme lets call it security test scheme then i applied it to a project which did not have an existing security scheme. Then in the project in configure fields there was a field called security level which had that option there and other option which said none

None
Security test level
What i need to now do is filter issues by the security level none and then bulk change and apply security test level to the security level field.

Ah, ok. Your language mislead me. You said " a new field i have created called security level" - you did not create a new field. You created a new "issue security scheme" which uses a system "field" referred to as "security level".
This field does not appear in the simple search drop-down. It does appear if you used advanced search, but it is called simply "level".
You will only be able to search for levels of which you are a member too. But I think "level is empty" should return your list of open issues you need to change.
