Just want to know, how to Migrate multiple Jira instances into a single instance with the multi-tenant feature?

Atlassian already cover the procedure on their documentation and help pages.
As a resume:
Merging JIRA instances requires migrating all projects, issues, dashboards, etc. from one instance to another without deleting or changing the existing content in the target instance.
This is a complex task, however, as users, custom fields, workflows and schemes must match first before completing the project import. You may be required to change the configuration of your target JIRA instance to accommodate the project import.

We have 3 instances like Jira-A, Jira-B, Jira-C servers and migrating to one server "Jira-ABC", this is possible as you mentioned above.
But here Jira-A users would not see the Projects of Jira-B & Jira-C servers and vice-versa, this is nothing called multi-tenant feature.
I just want to know that, is this possible?

First at all, note that any Jira Administrator user in the destination server (Jira-ABC) regarding in wich server (Jira-A, Jira-B or Jira-C) was previosly configure will see all projects.
In addition, after merging the three Jira instance you can just create a shared permission scheme across project from an specific jira instance. And use group or roles to determine which users can see what projects, e.g.
-- 3 Permission Scheme
---- Browse Project permission --- Only Group jira-a-users
---- Browse Project permission --- Only Group jira-b-users
---- Browse Project permission --- Only Group jira-b-users
You will need to categorize your users in three big groups to manage permissions individually.

Assume, all 3 Jira users are in one Jira-ABC instance, Jira-A users shouldn’t be able to see Jira-B & C users as from their email addresses, it will be quite evident who the customer is.
Is this possible?

Hi, please check under "General configuration" in the Jira admin UI. There's a setting for "User email visibility" which can be toggled between:
"Hidden" option is what you are looking for in this case.
