When I click the site selector icon in the top left corner of an Atlassian site, I see a dropdown that lists my company and other organizations' Atlassian sites. For Jira, another company's Jira site appears as the default Jira site:
Here you can see that the "jfrog" Jira site appears as the default instead of "synaptivemedical" which is the company that I actually work for.
How can I edit this list to remove other organizations or change which Jira site is the default?
Those sites in the list appear in alphabetical order

This based on access you have with you Atlassian account on the other site.
You need to contact the other site and see to have your account removed or permissions altered.
The list you see is alphabetically set.

It looks like this Jira site selector dropdown only appears when I'm on the Bitbucket site. If I am on my company's Confluence site, then the Jira link doesn't show a dropdown and it goes to my company's Jira site:

@Marc - Devoteam is correct. The only thing you can do it contact an admin from the other sites to remove you.
