After I created a project, I realize I should have created an Epic. Can I take the project and change it to an epic or do I need to create the Epic then delete the project?

That depends what a project is in your Jira instance. If it is an issue type (like an epic), you should be able to convert the project (issue) into an epic.
Open the issue, click on the ... button near the top right corner of your screen and select Move:
Select the Jira project you want the Epic to be in and select Epic as the desired issue type. Follow the steps in the wizard until you can confirm the issue to be converted.
If you have created an actual Jira project - as in a container to create issues in - then you have done something completely different. In that case you can't convert it into an epic, but have to create your epic as a completely new issue.

@MattD - Thanks - I'm coming from Microsoft's Azure Dev Ops where there was a board for Epics, board for Features, board for Story. I worked in Jira approx 5 years ago, lot has changed. Trying to readjust to Jira Board.... which is my first love. I received a tip from Walter B which helped me immensely. Appreciate your feedback.

@Walter Buggenhout - Your suggestion was exactly what I was looking for. Thanks - I'm coming from Microsoft Azure Dev Ops board. I worked in Jira but it was almost 5 years ago. Board doesn't resemble what I remembered.... and of course, recent experience on ADO only muddies the water. Appreciate your help!
