I want to quit, but it won't quit. How do I uninstall sourcetree from mac?
You can try force-quitting SourceTree. Simply press Cmd +Opt + Esc, and select SourceTree and Force Quit.
Then if you still need to remove SourceTreem, open the Applications folder in the Finder, search for SourceTree application, and delete it (Cmd + Del).
It should do the trick.

This does not completely uninstall the app. Settings remain.
