I am in the issues section of my project and I am the admin. The only issue options I have to create is 'Bugs', 'Tasks' and my own. Is there another step I need to take to see the option of 'Sub Task' when adding new issues to my project?

Go to project settings -> issue types. Then choose Actions -> Edit Issue Types and add a sub-task issue type to your issue type scheme.

Ok. Now I understand. You created a next-gen project. This type of projects do not have subtasks yet. But it is on the Roadmap. And subtasks will be available in a future release.
If you need subtasks right now, then you should create a classic project.

2024 and I'm still having trouble adding sub-tasks to a new project. Have they gotten around to adding subtasks to the "next-gen" projects?
If not, should I just link tasks to their story?
