I cannot configure "set resolution" after copying and editing the project workflow

After copying, oder editing the projekt workflow the checkbox for "set resolution" in teh Scrum Bord is hidden, or not availible. 

Is there a reason for this, and is there any other possibility, to tell Jira, in wich status the task will be done?

That flag only appears for "simplified workflow", and copying a workflow de-simplifies it.

What you need to do is edit the workflow.   Look at all the transitions into and out of "Fertig". 

On transitions going into it, you need either a screen for it that has the resolution on it, or a post-function that sets a resolution.  (Do not do both on the same transition)

On transitions going out of Fertig to other status, you will want a post-function that clears the resolution.
