I want to disable original estimate and remaining estimate option

Hi,

I am a jira admin and I want to disable the original estimate and remaining estimate option for customers.

Remove the "time tracking" field from the screens the customers are using.

I want to only disable means non editable for other users, but user can able to see the original time provided him. How I can do this?

My problem is that user changed the time and create new task and provided estimation, which is not easy to track manually. So what is the other option so user can not able to change original estimation once sprint start or once estimation is provided by them. So scope my sprint can not change.
