My team works on three week sprints and I am not 100% sure where the chart gets it's data from. I want to assume it is only marking work done once at the 'done' status? I want to see if I can (for the purpose of the chart) mark the work 'done', when it is waiting for client approval (which can be a blocker for us). This would offer more value as we would see work progressing each day...
Is this possible?

Sprints consider work completed when the issue is in the column farthest to the right in the Scrum board. There is no configuration you can enable that will tell Jira to consider other or multiple columns as the indicator that the work is complete. And there is no option to change the chart configuration.
You can map multiple statuses to that right-most column, and then the work in all those statuses will be considered "completed" in the sprint.
However, when you Complete Sprint, then all those items would be considered complete. The "client approval" issues would not be moved to the next sprint nor the backlog.
Thanks Trudy, that is a great response. So I need to evaluate the statuses for the last column then. I do need to work with the team on those and they are quite messy and inconsistent with other projects the team has.
I am unsure how to map statuses to columns though as I am new, I will take a look on-line but would also accept are suggestions? ;)

You would do that in the Board Configuration. Click the button labeled with three dots in the upper right corner above the board. Click the Configure option.
Depending on the type of project/board you may be taken directly to a screen that shows the Statuses mapped to Columns, or you may have to choose Columns from a list of configuration options.
On that screen you can drag and drop to move statuses to different columns.

I have done that however the board options are limited. I am now having to look at third party plugins but this comes at an additional cost which my employer is unlikely to accept.

Hey @Trudy Claspill thanks. I was working off the burndown last week and could access a link to see the work as it progressed through the sprint as well as any scope changes. This link is no longer there and I need to find a way to get back to that uber valuable information.

Are you working with a Team Managed project or a Company Managed project? You can find that information at the bottom of the navigation panel on the left when you are viewing the project, or in the Type column on the View All Projects page under the Projects menu.
Can you show us what you currently see? Obscure confidential data.
