if your customers are managed in different projects, you can create different custom field contexts per project basis https://support.atlassian.com/jira-cloud-administration/docs/add-a-context-to-a-custom-field/
If your customers are in the same project, natively you can't do that using builtin features.

Thanks for your response, Actually my query is When X customer trying to raise a ticket in the service desk portal, If X customer raises the ticket it needs to populate differently values Only for that X customer.
