Is there a way to "archive" a board so that I do not lose those tasks for that "project/board"...
We would like a way to "archive" like we do for a whole project without losing the work history associated with that project.
Currently we treat each project as its own project but we would like to change this process and use Boards as projects instead....

That does not make any sense. A board is just a view (with some additional features, like reports, sprints etc) on a set of issues. It does not "hold" any issues, but just displays a selection of them.
If you move into board settings > general, you will find a filter there. This is what decides which issues are displayed. By just adjusting that filter to your needs, you can perfectly narrow or broaden the selection of issues displayed on the board.
On a side note: both scrum and kanban boards already make issues disappear from sight. In a scrum board, completed issues disappear from the board when you close a sprint. You don't see them anymore on the board, but they still remain in Jira and you can still search for and report on them. On a kanban board, the same happens when you release issues from the rightmost column or when they have been completed for a certain amount of time.

Currently, we create a separate project for each true NON-Software related project and we are using Jira for this . We are really using the "Waterfall" methodology for these projects... Like "building a house", we have main groupings of work that we are calling Epics and then our tasks and subtasks beneath that...
Currently when a project is finished or "house is built" we are just archiving those projects... Instead of needing to create a project each time we "build a house" , I would like to create a board for each so that we do not need to change the settings each time and it is easier for each of our teams to work on a few projects... Once a "house is built", should we just delete that board? I would like those tasks associated with that board to still show up for statistics around workload.....
