Each Status like A, B, C A status have 1,2,3 Sub tasks, B have 4,5,6 and C have 7,8,9.
ticket have A status we need see only 1,2,3 we don't want to see 4,5,67,8,9
then ticket have B status we need see only 4,5,6 we don't want to see 1,2,3,7,8,9
then ticket have c status we need see only 7,8,9 we don't want to see 1,2,3,4,5,6

For this use case, you can put automation to create subtasks 1,2,3 while the parent task enters status A. And when the status changes from A to B or C (transitions), you can set to close the tickets or set view restrictions via issue security - what ever your process wants..
While we can technically do what i said above, i wouldnt recommend to complicate the workflow with such automation. May be something like https://marketplace.atlassian.com/apps/1220209/issue-checklist-for-jira-free?tab=overview&hosting=cloud could help you simplify the implementation?

In Jira we have a workflow based on Issue type. different issue type has different workflow.
Do you want to put restriction on issues or statuses/transaction? Please clarify what you are looking for?

Here is the automation rule you can use to create subtask when issue is move from one status to another and also you can put the issue security to hide the issue from specific group of user.
