We have started using EPICs in our JIRA instance. However, we noticed that icons that we have added for our Issue Types are twice the size of the system defaults. I then resized our icons to be 16x16 but then JIRA just stretches the icon back up to 32x32.
Has anyone come up with a solution to this?

From here, you can try the workaround described at JRACLOUD-72125:
The only way to have the custom icons actually match with the default ones in the UI, it would be necessary to have white borders on them as well.
I will also suggest you watch these bugs as all news and updates in regards to this issue will be shared through them."

Interesting solution. I didn't think of that. I did some testing with that but it introduces other issues.
When I create the 32x32, in order for the icon to align with the other icons when viewing the EPIC, it needs to sit in the top left corner. Since the image is still twice the size as the system icons, the height that the ticket line item is double that of the others (this is minor and didn't bother me that much).
However, when you open the ticket, the icon on the ticket view then looks even smaller and off centred.
The ideal solution (since I don't think Atlassian will ever fix this) is a CSS fix by adding a max-width of 16px to ".ghx-issuetable img" and this resolves the issue.
I couldn't find any plugins to that would allow me to do this. Would you know of any?

Unfortunately, no I am not aware of any add-ons that do that. And that seems like a lot of extra work and expense that I am not willing to do for the list to show up better.
So, a couple of notes/suggestions:
1. The sizing issue does not appear to be a problem using the New Jira Issue View. (I don't particular like that view and rarely use it myself)
2. I simply got new icons that look very similar to the existing ones for the system issue types and replaced them with my own. Now they are all the same size. :-)

I wasn't asking for you to do the fix. I was just seeing if there were any other solutions to resolve this issue. While I agree that it a lot of work just a make a list look good, while it's broken, it does not look very professional.
I refuse to use the new Jira layout. I find it very hard and almost impossible to say anything positive about it. The lack of control around custom fields is a major issue for us. I am already evaluating Jira alternatives should Atlassian device to retire the current layout in favour of the new.
I may have to settle with using System icons which would be very disappointing. While the screenshot I include was for one of our more generic issue types, we have several issue types based product, partners etc. These are very useful for our team.

I was just saying that was the fix that I made for the Old Jira Issue View - was to change the system icons to using custom Icons like I did for the new Issue Types I added. That makes all of the icons the same size.
Anyway, the links are above for following along if/when Atlassian makes a decision on the fix. :-)
Also agree on the New Jira Issue View - I use the old 99% of the the time.
